CZECH REPUBLIC – Kolach with Cheese and Plum Jam Filling

Our current jam – the Kolach with Cheese and Plum Jam!

Recipe Ingredients

Ingredient Weight
For Kolach:
All-Purpose Flour 700gm
Pillsbury™ High Fibre Bread Concentrate 300gm
Milk 500ml
Sugar 150gm
Oil 6 tbsp
Softened Butter 3 tbsp
Vanilla Essence 1 tbsp
Egg Yolks 3
Yeast 50gm
Lemon Peel
Egg, for Glazing
Oil, for Greasing
For Filling:
Soft Cheese 500gm
Raisins (wash and drain) 3 tbsp
Sugar 3 tbsp
Vanilla Essence 1 tbsp
Egg Yolk 1
Lemon Juice 1 tbsp
Plum Jam 1 jar

Preparation

  1. Sift the flours directly into a large bowl. To it, add egg yolks, yeast, sugar, softened butter, milk, oil, lemon peel and vanilla essence.
  2. Knead until you have a smooth dough, then cover with a cling film and store in a warm place to rise until it is double in size.
  3. Repeat this step two more times. Ensure that you punch the dough with your fist and knead before setting it aside.
  4. Now, mix soft cheese with yolk, sugar, vanilla essence, raisins and lemon juice.
  5. Roll the dough on a lightly floured surface, then cut out 20 same-sized circles.
  6. With a bottom of a glass make an indentation in the circles of dough, then fill them with the cheese filling.
  7. Transfer the dough into a greased baking tray.
  8. Drop a dollop of plum jam onto the cheese filling.
  9. Leave the tray allowing the dough to rise a bit.
  10. Glaze the rim of dough around the dough with an egg wash.
  11. Bake in the oven preheated to 180°C for 20 minutes, or until the edges are golden brown.
