  1. Add Bread Mix Concentrate, Flour, Yeast, Fat and Water to a bowl and mix using a bread hook or in a spiral mixer at slow speed for 2 minutes.
  2. Mix further at medium speed for 6 – 8 minutes until gluten network is formed.( The dough temp should be 26 – 28 °C )

Resting and Moulding:
Give 5- 10 minutes resting time and scale the dough in desired amount and mold accordingly.
Place the mould in final proofer at 35 – 37 °C and 86% RH for 55 to 60 minutes.
Bake at 210 – 230°C for 20 – 30 minutes.
